There's something about summertime which makes me crave tomatoes. I love their juiciness, the fresh taste, their sweetness which seems to linger in your taste buds and remind you of the deliciousness that only a fresh tomato can bring. Lucky for Lovely, our West Coast friend, Laura, happens to be an amazing chef who provides us with simple to follow, healthy, and lovely recipes. This recipe for Breadless Bruschetta has only five ingredients and only requires a garlic press, pan, and serving tray. I know I would love to make this recipe for my next summertime cocktail party as part of the main entrees, or even as part of the appetizers. I love that Laura took a recipe traditionally made with bread and created a healthier, yet just as lovely and appetizing version.

Breadless Bruschetta from Sweet Life Laur

Serves 1

1 clove garlic
1 tablespoon olive oil
1 ripe tomato
Fresh basil – baby leaves or julienned larger leaves
Sea salt and Pepper to taste

  1. Heat oil in pan. Pass garlic through press. Saute garlic for about 2-3 minutes (just to cook out some of the bitter raw garlic taste). Let cool slightly.
  2. Meanwhile, slice tomato into thick slices. Prepare basil as desired.
  3. Stack tomatoes, sprinkle with basil and pour olive oil and garlic over top.
  4. Salt and pepper to taste, then serve.
