While sitting outside today, reading Gourmet Magazine, I came across this lovely recipe for Lemon Ice Cream Sandwiches With Blueberry Swirl. It's classic with a twist. I love how they use store bought ice cream and punch it up with lemon zest and juice. The blueberry compote look easy enough to make (and you can use fresh farm stand berries!); and everything in life is better between brownies or blondies. This looks like a great, simple, classy, and lovely desert recipe for your next party! Also, I would switch the fruit compote for whatever fruit happens to be in season (for example, Spring is blackberries and strawberries; Summer is blueberries, peaches, and plums; Fall is pumpkin and pears; Winter is oranges and grapefruit).
